Smoked Bacon Wrapped Meatloaf

I modified a meatloaf recipe I found on

– 4lbs Ground Chuckle
– 2lb Ground Pork Sausage
– 1lb Bacon
– 15oz Bread Crumbs
– 4 Eggs
– 1/2 cup Half and Half
– 5-6 Green Onions
– 4 Cloves of Garlic
– 2 TBS Worshire Sauce
– 4 TBS BBQ Rub of Choice
– Salt & Pepper to taste

First you dice the vegetables then work it in with the ground beef, pork and seasonings. Then crack the eggs and lightly beat them in a small bowl. Add the half and half to the eggs and whisk with a fork and add it to your mixture. Work these ingredients by hand into the meat and vegetables until everything is combined. I placed it into a half size steam table pan lined with plastic wrap and put in the fridge to form its shape. I then weaved up some bacon. Then get your smoker to 275 degrees to smoke you barbecue meatloaf. I used 3 chunks of pecan wood.  Once the smoker was up to temperature I pulled out the loaf. Removed it from the pan and placed on a rack so I could move it easier. I put a light coat of BBQ sauce on the top and then placed on the weaved Bacon. It then went on the smoker for about 3.5 hours. I put more sauce on the last 15 mins.

Man did this meatloaf taste good.
