This time I changed up a few things. I ordered a Vortex to help with coal management. I also upgraded from a mini chimney to a full size chimney. With the extra charcoal the temp in the dome was 550 instead of 300. This helped immensely with the crispness of the skin. Also reduced the cooking time. Next time I will shorten the cooking time. They could have been a bit more juicy. Smoked for about 45 mins and I flipped half way through. Used hickory wood for smoke. I used the same recipe as below.
