Today I smoked 3 racks of spare ribs. Purchased from Costco $3.69/lb. Used Sweet Rub o’ Mine rub.  Held the temp around 260.  Mixed up a batch of beans but realized that I did not have any pulled pork so I improvised and cut up some of my smoked Jimmy Dean breakfast sausage. This turned out very well.
